Porkka – professional blast chilling and freezing systems

The advanced new generation of blast chillers and blast freezers manufactured by Porkka are designed to meet the needs of all operators from kitchens to food processors. They are simple to operate and improve efficiency in any busy food production unit, whilst improving food hygiene and reducing waste. All Porkka models meet the strict chilling and freezing regulations of food hygiene authorities in various European countries.

All new models now include a specially developed SH-controller, enabling the operator to select the optimum blast chilling method to suit the food being chilled. Selection can be either from soft 
(reduces the possibility of ice forming on the surface of foods) to hard, (for quick efficient pull down), or combinations in between. The control unit is pre-programmed at our factory with a standard blast chilling setting for general use, but up to eight different programs can be entered and saved to suit the operator’s requirements. Programming is simple and easy to enter and there is an option to alter 
the speed of the chilling fans from half to full capacity to further assist the versatility of the equipment.
 

NEW: Memory stick recording
In April 2010 a memory stick based temperature recording system will be available for Porkka cold equipment. The unit, attached in the front panel of the cold equipment and equipped with its own digital display, real time clock and calendar, records the temperature data.
With recording intervals of 15 minutes, there will be room for about one year’s data on the memory stick. Naturally, the recording interval can be adjusted according to the needs. Depending on the length of the recording intervals it will take no more than 15 seconds to transfer the data to the memory stick. As soon as the data has been recorded on the memory stick, the stick will be connected to the USB port of the computer and all the information can be seen on the display. The numerical data is easy to work up with Excel software.
A 24 hours battery back-up is available as an accessory.

 

Accurate temperature control combined with process monitoring
The control system is equipped with a food safe hygienic probe which when inserted in the foods being chilled, ensures an accurate performance for the selected chilling process. When freezing, we offer a probe thatis equipped with a heating cycle which when operated allows the probe to easily remove from frozen product.
 

Automatic post-chilling/freezing mode
All Porkka's new blast chiller and blast freezer models have a built-in automatic defrosting period after the process is complete. After this the unit will revert to holding mode. With this feature it is not necessary to empty the cabinet/room immediately of product but it can be left over night or even over a weekend in creasing overall storage capacity.

 

Quality, hygiene and safety
All Porkka blast chilling and freezing cabinets and rooms are simple to use and easy to clean. Visible external and internal surfaces are produced from stainless s teel grade AISI304 to stop pitting or rusting, whilst the controllers are equipped with alarms and allow visual monitoring of t he process functions.

 

Versatile range

The comprehensive Porkka SH-range of blast chillers is extensive with a model to suit most operators from kitchens to food processors. Reach-in cabinets, which accept GN 1/1 pans or trays. Rooms with various capacities, which can accept GN 1/1 trolleys. Up to a pass-through room, which can accept 2xGN 2/1 trolleys. This versatile range offers a model for most chilling and freezing requirements for the busy operator.

 

Reach in models blast chiller BC720SH and blast chiller/freezer BC/BF 720SH are manually filled
 cabinets. They are complete with onboard condensing units or can be connected to a central cooling system. The cabinet is supplied with 10 x pairs of GN 1/1 runners to accept GN 1/1 pans or trays. (Optional GN 1/1 shelves can also be supplied). Visible surfaces both internal and external are produced in stainless steel grade AISI 304.

BC and BC/BF 960SH and 990SH as well as BC and BC/BF24-100SH are single door cabinets accepting a single GN1/1 trolley with capacities from 60 kg to 100 kg blast chilling and 60 kg to 100 kg blast freezing capacity. These units can be either connected to a central plant system or a remote condensing unit sited externally of the building. (See notes on BC-BC/BF 48-200 on pipe work etc). Floors are provided on BC/BF versions and ramps may be required.

BC and BC/BF 48-200SH models are a double section pass through version supplied with 2 x doors and a sliding dividing wall and are designed to be loaded with either 2 x GN1/1 or 2 x GN 2/1 trolleys. Both sections to be operated independently on separate programms. (Note: chill or freezer mode only not one compartment chill and the other freezer). One system at a time may be operated when production is reduced, lowering operating costs.

Rooms are supplied ready for connection to either a central cooling system or due to the high capacity a remote condensing unit, which is usually sited external of the building. Note: it is the installer's/ purchaser's responsibility to supply interconnecting pipework, insulation, electrical wiring, external housing as well as drainage. The condensate from both the cabinets and the rooms requires leading to an open vented drain or tunn dish type drain.

Porkka modular blast chiller and freezer rooms have the advantage of being delivered in a knock down format, with the evaporator and controller section ready assembled. The assembly of the
rooms is easy and fast. After erection the power supply is led to the control unit and the connection is made to the remote condensing unit and the unit is ready to operate.

Blast chiller rooms are supplied without floor for ease of trolley operation. BC/BF rooms are supplied with insulated floor, if necessary, the floor panels can be placed in a recess (made by others) to once again assist in trolley operation. Floor panels are equipped with heaters to reduce the possibility of freezing substructures and or possible damp ingression (option).

If floor panels are not sunk into the floor, a ramp can be supplied to assist with trolley operation.
Roll-through BC/BF 24-200SH rooms may require 2 x ramps and a heated floor should always be used.
